happy thanksgiving.

1 cup lentils
1 cup chopped onions
4 cloves garlic, minced
1/3 cup fresh chopped dill
1 carrot, chopped
1/3 cup fresh chopped parsley
3 T white wine vinegar
3 T dijon mustard
3 T olive oil

cook lentils in water to cover for 30 minutes
or until soft.
drain and cool. sautee onions and garlic for 30 seconds
to 1 minute. in a bowl, combine dill, parsley, vinegar, oil, mustard and carrots
add onions and garlic. toss with cooled lentils. wait 30
minutes before serving.
